Kosha Mangsho

A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Flax seeds Laddoo/ Alshi che laddu

Flax seeds are very healthy and a super food which is rich in plant-based omega-3 fatty acids, dietary fibers It's best when consumed during winters as it helps in keeping the body warm. To be avoided by pregnant women and it might stimulate contraction or mensuration

Here is a very quick and easy recipe of making flax seeds ladoo

Ingredients 

  • 3 Cups Flaxseeds
  • 1/2 Cup Sugar (adjust the sugar as per your taste)
  • 1 Tsp Cardamom Powder
  • 1/4 Cup Dink / Edible Gum
  • 1/2 Cup Ghee
  • 1 Cup Wheat Flour
Method 

  • In a deep pan, add whole flax seeds and roast them on low-medium flame till they turn dark brown in color (do not roast them on high flame as they tend to burn)
  • Once they are roasted well, cool and  grind them to a fine powder
  • Heat 1/4th cup ghee in the same pan and add the edible gum to it and fry till they turn light brown in color. Remove the edible gum by draining the excess ghee, cool and then crush them with the help of a rolling pin
  • Add wheat flour to the remaining drained ghee from the edible gum and roast it till you get nice aroma from the flour and the raw smell completely disappears from the wheat flour. This will  take 10-15 minutes 
  • In a grinder, grind sugar and cardamom to a fine powder
  • Now, in a big bowl/ plate mix the flax seeds powder, crushed edible gum, sugar, 1/4th cup melted ghee and the roasted wheat flour when its little warm and make round shaped ladoos with the help of palm and fingers
