Kosha Mangsho

A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Ingredients

  • 1 kg Chicken
  • 4 Onion (finely chopped)
  • 3 Tbsp Oil
  • 1 Cup Water
  • 2 Tsp Garam Masala 
  • 2 Tsp Red Chili Powder

Green Paste 
  • 3 Green chilies
  • 1 Cup Coriander
  • 1/2 inch Ginger 
  • 4 Garlic Cloves
Onion-Coconut Paste
  • 2-3 Sliced Onion
  • 1-1/2 Cup Grated Coconut
  • 2 Pieces of Tamarind
  • 1 Tsp Turmeric  Powder
  • 1/2 Tsp Black Pepper 

Method

  • Grind green chilies, coriander, garlic and ginger in a mixer and  make a fine paste (Green Paste)
  • Marinate the chicken with half a teaspoon turmeric powder, green paste, salt and keep it aside for an hour
  • Take oil in a pan, add the sliced onion, grated coconut, 1/2 Tsp of turmeric powder, black pepper and roast it for 15-20 minutes. Grind  the mixture by adding tamarind  and water and make a fine paste (onion and coconut paste)
  • In a deep bottom pan, add oil, finely chopped onion and saute for 5 minutes. Then add the marinated chicken a little bit of water and close it with a lid and allow the chicken to cook for about 20-25 minutes
  • Once  the chicken gets cooked add the onion and coconut paste and cook for 2-3 minutes 
  • Finally, add the garam masala powder, red chilly powder and salt and mix well.
  • Cook for 2 minutes and serve hot with chopped onions, bread/ Rice
