Kosha Mangsho

A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp ...

Salted Crunchy Potato Chips In Microwave

Potato chips is one of the most favourite snack for kids as well as for adults. I"m personally not a very big fan but my husband loves them. So thought of trying these at home in a microwave as I din"t want to deep fry them. Checked a few videos online and thought this was a pretty easy
I was surprised to see the result as they tuned out super crunchy and crispy just like the store bought with minimum oil with very few ingredients

The secret of perfectly crispy chips are very thinly sliced potatoes

Ingredients

  • 2 Potatoes medium sized
  • Oil for brushing
  • Bowl of cold water
Seasoning
  • 1/4 Tsp Red Chili Powder(optional)
  • 1/4 Tsp Salt
  • 1/2 Tsp Mixed Herbs

Method

  • Wash potatoes really well to remove all the dirt.
  • Thinly slice the potatoes with the help of a sharp knife/chopper. Remove the skin if desired or you can just leave it intact.
  • Once the potatoes are sliced put them immediately in cold water and keep it for 5-10 minutes

  • Place the slices on a kitchen napkin and pat dry them

  • Line a medium sized plate with parchment paper and place the potato slices on top of it . See that they do not overlap

  • Brush some oil on both the sides of a potato slices (I couldn't find my brush :( so I applied the oil with my fingers which makes it a little messy ) and keep it aside

  • Take a bowl and mix all the ingredients mentioned under seasoning

  • Sprinkle the seasoning on top of the potato slices and put the plate in the microwave on high heat

  • Microwave it for 4 minutes on one side and then slip the potato slices and microwave for another 3 minutes till they turn crispy and slightly brown (the time will differ according to your microwave )
