A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Pan Fried Chicken In Lemon & Garlic Sauce

Ingredients

  • 2 Chicken Breast
  • 1 Tsp Pepper 
  • 1 Egg 
  • 3-4 Tbsp Processed Cheese (Grated)
  • 2-3 Tbsp Coriander (Chopped)
  • 1/2 Cup Corn Flour
  • Butter for frying
  • Oil for frying 
  • Salt to taste

For the Sauce
  • 4 Tbsp Lime Juice
  • 1/2 Onion (Finely chopped) 
  • 3-4 Tbsp Garlic (Chopped)
  • 2-3 Tbsp Coriander (Chopped)
  • 1/2 Cup Chicken Stock / Water
  • 4 Tbsp Fresh Cream
  • 1/2 Tsp Pepper

Method

  • Clean the chicken breast and begin cutting down the length of the side of the breast with a sharp knife. Carefully slice the breast in half width wise almost to the other edge.Open it up and it will appear to be in the shape of a butterfly

  • Flatten the chicken with the help of a mallet or a rolling pin
  • Marinate the chicken with 1/2 Tsp pepper and salt,keep it aside

  • In a separate plate, beat an egg, add 1/2 Tsp pepper, salt , cheese, coriander leaves and mix it well

  • Heat 1 Tbsp of butter and a little oil on a pan on medium flame 
  • Coat the chicken nicely from both the sides with cornflour one by one

  • Then, deep it in the egg and cheese mixture and place the chicken on the hot pan


  • Fry it till the chicken gets cooked and turns golden brown on both the sides, which will take about 10-12 minutes 
  • Remove it on a plate and keep it aside (you can just eat the fried chicken without the sauce, it tastes delicious)

  • In the same pan, add a tsp of butter, onion and garlic and fry it till golden brown by adding a little salt, which will help the cooking process


  • Once the onions turn brown, add water/chicken stock, lime juice, cream, coriander, pepper and mix it well
  • Let it cook on medium flame till it reduces and turns a little thick  


  • Pour the lemon and garlic sauce on the fried chicken just before you eating (or else the crispy fried chicken turns soggy)
  • Serve it hot with some butter garlic bread or plain bread
