A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Mixed Fried Rice


Ingredients

  • 2 Cups Cooked Rice 
  • 2 Tbsp Oil
  • 1-1/2 Tbsp Garlic (chopped)
  • 1 Tbsp Ginger (chopped)
  • 2 Carrots (finely chopped) 
  • 1/4 Cup Spring Onion Whites 
  • 1/4 Cup Spring Onion Greens 
  • 8-10 French Beans (finely chopped)
  • 1-1/2 Tsp Pepper Powder
  • 2 Tbsp Soya Sauce
  • 1/2 Cup Chicken
  • 5-7 Prawns
  • 1 Egg
  • Salt to taste

Method

  • Heat a tbsp of oil in a wok on high flame, add the chopped garlic and ginger and fry them for about 2 minutes till you get a nice fragrance. Then add the spring onion whites and cook for a minute

  • Add finely chopped carrots, french beans (you can add any other veggies of your choice) and stir fry them on high flame for about 4-5 minutes

  • Once the veggies are cooked, add chicken chunks, prawns, salt , pepper, soya sauce and mix well. Stir fry it till the chicken and prawns changes colour and are cooked


  • Add an egg. Don't stir! Let the egg cook until the bottom starts to set, then with spatula scramble it and mix it with the other ingredients

  •  Add the cooked rice, onion greens, a tbsp of oil and mix it well. Check for salt. Mix all the ingredients well. 
  • Stir fry for about 3-5 minutes, till the rice gets mixed well
