A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Coconut Ladoos /Nariyyal Ke Ladoo



Coconut ladoo/Ladu is one of the Indian sweet that can be made quickly with very few ingredients. I made these with desiccated coconut, condensed milk, milk and cardamom powder.These can be made with fresh coconut as well 

This is an excellent sweet for any festival which can be made easily with minimal efforts .

Ingredients 

  • 3 Cups Desiccated Coconut
  • 1/2 Cup Desiccated Coconut (coating )
  • 1.5 Cup Condensed Milk
  • 1/2 Cup Milk
  • 1/2 Tsp Cardamom Powder
  • 1/2 Tbsp Clarified Butter/ Ghee

Method 

  • Take a bowl, mix of condensed milk and milk together 
  • Heat ghee on medium fame in a heavy bottom thick pan, add the condensed milk and milk mixture. 
  • Once it starts to just boil which will take about 2-3 minutes, add 3 Cups of  desiccated coconut and mix really well 
  • Keep stirring it with the help of a spatula/ wooden spoon on low to medium flame.
  • When it starts leaving the sides of the pan , add the cardamom powder and mix well 
  • Continuously keep stirring the mixture till all the moisture is absorbed and it comes to a soft dough like consistency which will take about 15-20 minutes 
  • Switch off  the flame and cool the mixture a little so that you can make the ladoos (Do not cool it completely as round balls might not get formed later)
  • Take small portions of the mixture and start making round balls by applying little ghee to your hands 
  • Gently coat the laddoos with the desiccated coconut
  • Delicious coconut laddoos are ready to be served
