Kosha Mangsho

A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Prawns Masala

Ingredients 

  • 1 Cup Onions/2 Onions (chopped)
  • 1/2 Cup Tomato/1 Tomato (chopped)
  • 1/4 Tsp Cumin Seeds
  • 2 Bay Leaves 
  • 2 Tsp Tomato Ketchup
  • 1/2 Tsp Coriander Powder
  • 1/4 Tsp Garam Masala
  • Chopped Coriander
  • Water

For Marination

  • 10-12 Prawns
  • 1/2 Tsp Red Chili Powder
  • 1/4 Tsp Turmeric Powder
  • Salt to taste 

Green Paste 

  • 3-4 Garlic Cloves 
  • 1 Inch Ginger 
  • 10 Peppercorns 
  • 1/4 Tsp Cumin 
  • 1/4 Tsp Fennel seeds
  • 1 Cardamom
  • 2 Cloves
  • 1 Red Chili
  • 1-2 Green Chilies 
  • Small Piece of Cinnamon 
  • 1/4 Cup Water
  • Handful of coriander

Method

  • Clean and marinate the prawns with red chili powder, turmeric powder, salt and keep it aside 

  • Take a blender, add all the ingredients listed under "Green Paste"  and blend it to a smooth paste by adding some water and keep it aside 


  • Heat oil in a heavy bottom pan, add cumin seeds, bay leaves and once the cumin seeds splutter add the marinated prawns and cook them for just 1-2 minutes on medium flame and then remove them and keep it aside


  • In the same pan, add a tsp of oil ,the onions and fry them till they turn slight brown in colour by adding a little salt which will help the cooking process of onions

  • Add in the tomatoes and cook it till they turn mushy, which will take about 2-3 minutes on medium flame 


  • Once the onions and tomatoes are cooked well, add the coriander powder, garam masala and the green paste. Cook it for 2-3 minutes till all the spices cook well and the raw aroma disappears which will take 3-4 minutes 



  • Add a little water to the blender and clean it so that we do not miss on any flavors and add it the gravy and adjust the consistency of the gravy. Then add the tomato ketchup and mix well 


  • Now add the fried prawns to the gravy ad mix well, so that they are well coated with the masala and cook for 2-3 minutes


  • Garnish it with chopped coriander and serve hot with Roti or Rice
