A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Grilled Chicken With Sauteed Veggies



Ingredients 

  • 1 Chicken Breast/ leg pieces
  • 1 Tbsp Lemon Juice
  • 1/4 Tsp Pepper Powder
  • Salt to taste 

For Marination

  • 3 Tbsp Yogurt
  • 2-3 Garlic Cloves (Grated)
  • 2 Tbsp Coriander Leaves (Chopped)
  • 1/2 Tsp Lemon Zest (do not include the white part of the lemon)
  • 1/2 Tsp Oregano
  • 1/4 Tsp Chili Flakes 
  • 1/4 Tsp Crushed Pepper
  • pinch of salt 

For the Veggies

  • 1/4 Cup Bell Pepper
  • 4-5 Mushrooms 
  • 1/4 Tsp Pepper
  • 2 Tsp Balsamic Vinegar
  • Salt to taste  
Butter/ Oil for frying 

Method

  • Clean the chicken breast/leg piece and make small slits into it so that it gets marinated well
  • First marinate the chicken with some salt, pepper and lime juice and keep it aside 

  • Take a bowl and add all the ingredients listed under "For Marination"

  • Mix all the ingredients really well

  • Apply it nicely on the chicken breast/ leg piece and keep it for marination for around 2-3 Hours



  • Once it is marinated well, place the chicken breast on a grill pan with some butter on it and cook it nicely on both the sides first on low heat and then on medium heat  for about 7-10 minutes on both the sides 
  • Remove the cooked chicken on a plate and on the same pan, add 1 Tsp of butter/ oil and saute all the veggies for about 2 minutes on medium flame by adding pepper, salt and some balsamic vinegar 
  • Serve it hot with the tossed veggies
