Kosha Mangsho

A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Wheat Flour Onion Paratha



A quick, healthy and an easy recipe that can be made from the readily available ingredients at home
Every morning when I wake up the only question that is in my mind "what do I make for breakfast?" and when I ask my husband, the only answer I get it bread, eggs and beans. :(  But when bread is not available at home I have to think about something else, that can be made quickly and its a tough job :(Every morning I scroll down the many food groups which I have joined on Facebook to get some quick ideas Once I get an idea of what is to be made, I try my own version and here it is a very quick and healthy onion paratha recipe made from wheat flour

Ingredients 

  • 2 Cups Wheat Flour 
  • 1 Tbsp Cumin Seeds
  • 2 Onions(finely chopped)
  • 2 Tbsp Coriander (chopped)
  • 1 Tbsp Mint Leaves/Pudina (chopped)
  • 1 Tsp Turmeric Powder 
  • 1-1/2 Tsp Clarified butter / Desi Ghee (optional)
  • 2 Green Chilies (finely chopped)
  • Clarified butter / Desi Ghee to apply on the paratha
  • Salt to taste 
  • Water for kneading dough

Method 

  • In a bowl, add all the above ingredients except water and mix it well 
  • Add water little at a time and make a soft dough and rest it for 5 minutes 


  • Pull out a small part of the dough and roll them into small balls 

  • Flatten it and cover with flour on both the sides and place it on a flat surface and roll it out flat into medium sized roti



  • Heat pan on medium flame and place paratha on it and cook it well on both the sides while adding ghee whenever required 
  • Serve it hot with ketchup/curd or pickle
