Kosha Mangsho

A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Goan Style Squids (Calamari) Chilly

Goan Style squids chilly/ chicken chilly is a famous dish in all the Goan restaurants which are famous for seafood.
For a long time I wanted to try this at home, as squids are one of my favourite but couldn't really find the recipe , when I searched online . So thought will make my own spicy and tangy version and it turned out superb.
Its a very simple recipe of all the basic ingredients available at home

  • 2 Green Chilies (chopped)
  • 1 Tbsp Soya sauce
  • 1/2 Tsp Pepper Powder
  • 1/2 Tsp Coriander Powder
  • 1/2 Tsp Garam Masala
  • 1/2 Tsp Red Chili Powder
  • 1/4 Tsp Turmeric Powder
  • 3/4 Tsp Sugar
  • Salt to taste

For Marination
  • 6-7 Squids (200 grams cut into rings)
  • 1-1/2 Tsp Ginger Garlic Paste
  • 1 Tbsp Coriander (chopped)
  • 1/4 Tsp Turmeric Powder
  • 2 Tsp Lime Juice
  • Salt to taste

Method

  • Marinate the squids with the ingredients listed under "for marination" and keep it aside for 15 minutes

  • Heat a kadai/ wok with oil on medium heat and add the chopped onions and fry till golden brown with a little salt

  • Once the onions turn brown, add the sliced capsicum, tomatoes, green chilies and cook for 5-7 minutes on medium flame till the tomatoes turn mushy and capsicum is cooked well

  • Add in pepper powder, coriander powder, garam masala, red chili powder, turmeric powder, sugar , soya sauce and mix well

  • Finally, add the marinated squids and stir well so that the squids are well coated with all the ingredients and just cook for 3-4 minutes on low-medium flame. Check if the squids are cooked. Do not overcook the squids or cook it on high flame or else they turn tough and rubbery
  • Mix well by adding salt as per taste and serve hot
