Kosha Mangsho

A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Sweet and Sour Prawns

Ingredients 

  • 12 Prawns 
  • 1 Tbsp Oil
  • 5-6 Garlic cloves (Finley chopped)
  • 1 Tbsp Ginger (Finely chopped)
  • 1 Green Chili (chopped)
  • 1/4 Cup Spring Onion (Chopped)
  • 1 Tbsp Balsamic Vinegar
  • 1/4 Cup Water


For marination 

  • 1 Tbsp Soy Sauce 
  • 1 Tbsp Tomato Ketchup
  • 1 Tbsp Lime Juice 
  • 1-1/2 Tbsp Maida
  • 1 Tbsp Corn Flour
  • 1 Tsp Pepper
  • salt to taste 

Method

  • Clean and devein the prawns. You can keep the tails on or remove it



  • Apply salt and pepper  to the prawns and keep it aside
  • Prepare the marinate by adding soy sauce, lime juice, ketchup, maida, cornflour and add the above prawns to the marinade and keep it aside for 15-20 minutes 

  • Heat a pan, add oil and fry the prawns on both the sides on medium heat (do not discard the extra marinade )and keep it aside (you can deep fry the prawns but I have shallow fried the prawns on a pan )

  • Heat oil in a wok/kadai, add ginger, garlic, chopped green chili and saute for 1-2 minutes till the garlic turns light brown in colour

  • Add the spring onion and saute for a minute 
  • Now add the fried prawns and mix well
  • Add water to the remaining marinate, and  pour it to the above mixture and mix well
  • Add the balsamic vinegar  and cook for about 2 minutes by stirring well so that the prawns are well coated with all the ingredients 
  • Garnish with some spring onions and serve hot
