Kosha Mangsho

A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Egg Paratha/Anda Paratha

Ingredients 

  • 3 Eggs 
  • 1 Small Onion (finely chopped)
  • 1/2 Tomato (finely chopped)
  • 1/2 Tsp Red Chili powder
  • 1/4 Tsp Turmeric Powder
  • 1/4 Tsp Cumin Powder
  • 1/4 Tsp Chaat Masala
  • 1 Tbsp Coriander 
  • 1 Green Chili (finely chopped)
  • 1 Cup Wheat flour
  • Water 
  • Salt
  • oil/butter for greasing 


Method 

  • Take a mixing bowl, add wheat flour, salt and make a soft dough by adding water little at a time and let it rest for 10 minutes 
  • Take another bowl, add eggs, onion, tomatoes, chilies, coriander , all the powders listed above under ingredients and whisk it with the help of a fork or whisker



  • Heat a pan over medium heat until hot and grease it with some oil
  • Divide the dough into equal round balls and roll it with the help of a rolling pin to form a big thick roti out of it 
  • Place the roti on the hot pan and fry it for 1 minute, once done turn it to the other side and fry for another minute 
  • Spread the egg mixture evenly on the paratha and let it cook for about 2 minutes 
  • Add some oil/butter from the edges of the paratha and then fold the paratha from both the sides and turn it and let it cook for 2-3 minutes 


  • Fry it till it turns crispy by adding some butter/ oil
  • Cut it into strips and serve hot with Ketchup
