Kosha Mangsho

A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Tomato Soup

Tomato Soup !! soup which is liked by all :)

When it comes to tomato soup the first thing that comes to my mind is the train journey. The yummy tomato soup with the crunchy bread croutons  that was served in the train when we were travelling to explore the beautiful north side of India for our college tour. It was the most comforting meal in the freezing cold as we had planned the tour during winters

Tomatoes are a very good source of vitamin C and antioxidants which help in maintaining good health. Keeping this in mind and looking at the big heap of tomatoes in my fridge :P thought of making tomato soup for dinner

You can make your very own home made tomato soup with the below delicious tomato soup recipe

Ingredients

  • 3 Ripe Tomatoes (Chopped into big cubes)
  • 1 Onion (Sliced)
  • 1 Carrot (Cut into medium size pieces)
  • 2 Garlic Cloves (Chopped)
  • 6-7 Peppercorns
  • 1 Tbsp Butter/ Clarified butter (Desi Ghee)
  • 2 Bay leaves
  • 1 Tsp Sugar
  • Croutons
  • Coriander for garnishing
  • Cream(optional)
  • 3 Cups Water
  • Salt to taste

Method

  • In a large heavy based pan, add butter(desi ghee adds more flavor). Once hot add bay leaves and onions and cook it over medium heat for  about 2 minutes
  • Add sliced carrots, garlic, and peppercorns and mix well
  • Add the chunks of tomatoes, a cup of water, sugar, salt and mix everything well and cook it on low flame for about 15-20 minutes till the tomatoes turn mushy

  • Take out the bay leaves from the mixture with the help of a spoon
  • Remove the pan from the gas and let it cool. Once it is cooled completely blend it in a mixture/blender and make a smooth puree by adding a cup of water
  • Take the same pan, add the puree and cook it for about 5-7 minutes by adding the remaining one cup of water (you can adjust the quantity of water depending on the consistency of the soup you need)
  • Garnish the soup with some coriander and serve the steaming hot soup in a soup bowl with some croutons
** Croutons can be made easily with white bread or even brown bread by cutting it into pieces and tossing it with butter on a pan over medium heat till they turn crunchy
