A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Creamy Mushroom Soup


Mushroom is my all time favourite veggie.This soup I had at one of my aunts place few years back, where I loved it and got the recipe from her. After that, I have made it quiet a few times. My father who hardly likes to have soups also loves it and doesn't mind just having this soup for dinner at times.

Its a very simple recipe which tastes delicious and can be made quickly in just 15-20 minutes with simple ingredients 

Ingredients 

  • 14-15 Mushrooms (cut into 4 pieces)
  • 2 onions(Chopped)
  • 2 Tsp Butter 
  • 3 Cups Milk
  • 1 Tsp Pepper
  • 1 Tsp Coriander (finely chopped)

Method

  • Take a pan,add butter, add chopped onion, salt and saute for about 5-7 minutes till it turns light brown in color
  • Add about 5-6 mushrooms and stir fry them till they turn tender

  • Cool down the above mixture and blend it in a mixer and make a paste


  • Take the remaining pieces of  mushrooms and season them with salt and pepper and keep them aside 
  • Take a large soup pot,add the  paste, mushrooms and saute for about 2-3 minutes 

  • Now add the boiled milk and stir continuously so everything gets mixed well and let it simmer for about 10-12 minutes

  • Add salt, pepper and finely chopped coriander
  • Serve it hot

** I love the chunks of mushrooms when I have my soup. If there is anyone who doesn't like the chunks, then you can add all the mushrooms at step 2 and make a paste
