Kosha Mangsho

A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Ingredients 

For marination

  • 200 Gram Mushrooms

  • 2 Tbsp Curd

  • 1 Tbsp Ginger finely chopped

  • 1 Tbsp Garlic finely chopped

  • 2 Tsp Kasuri methi 

  • 1 Green chili finely chopped

  • 2 Tbsp Caramelized Onion (optional)

  • 1-1/2 Tsp Red chili power

  • 1/2 Tsp Turmeric powder

  • 1/2 Tsp Garam masala

For the Gravy

  • 2 Onions chopped

  • 5-6 Cashew nuts

  • 1 Tsp Poppy seeds

  • 1 cup Tomato puree

  • 2 Tsp Tomato sauce

  • 2 Tbsp Oil

  • Salt to taste 

Method

  • Mix all the ingredients mentioned under marination by adding some salt and keep the mushrooms aside for about half an hour

  • In a heavy bottom pan , heat oil and add the onions 

  • Fry the onions for about five minutes on medium flame till they turn transparent and soft

  • In a blender add cashew nuts and poppy seeds and grind it to a paste by adding little water. Now,add the paste to the onions and mix well till oil starts separating

  • Add tomato puree and cook it for 10-12 minutes on medium-high flame till it leaves the sides of the pan 

  • Add the marinated mushrooms and mix well  

  • Cook the mushrooms for about 5-7 minutes on medium flame 

  • Serve it hot with rotis


**To caramelize the  onions , add 1 tbsp of oil, add sliced onions and a 1/2 tsp of sugar and fry till they turn brown with a pinch of salt.
