Kosha Mangsho

A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Soya Hot Garlic


Ingredients

For blending

  • 2 Cup soya granules /meal maker
  • 2 Tsp Curd
  • 1 inch Ginger 
  • 4-5 Garlic cloves
  • 1 Sprig curry leaves 
  • 1 Green chili
  • 2 Tsp red Chili powder
  • 1 Tsp garam masala powder
  • 2 Tsp coriander powder 
  • 1 Tsp cumin powder
  • 1/2 Tsp turmeric powder
  • salt to taste 
  • 3 Tbsp rice flour
  • 2 Tsp cornflour

For frying the soya 

  • 3 Tbsp oil
  • 1 Sprig curry leaves 
  • 4-5 Garlic finely chopped

For the Sauce

  • 2 Tsp Tomato sauce
  • 4 Tsp Schezwan sauce

Method

  • Take cooked soya chunks in a mixer.
  • Add all the ingredients for blending in a mixer and make a paste. Do not add the rice flour and corn flour.


  • Remove the mixture in a bowl , then add rice flour, corn flour and mix it well.


  • Now make small size balls of the mixture and keep it aside.
  • Heat oil in a pan, add the curry leaves and garlic toss it a little and then add the soya balls and fry them from all sides on high flame till the turn golden brown from all sides this will take about 10-15 min.
  • Soya balls can be deep fried too.But i prefer to shallow fry them.
  • Remove the fried soya balls in a bowl and keep it aside.


  • In the same pan add a little oil , then add the tomato sauce and the schezwan sauce and mix it well.
  • Then add the fried soya balls and mix it well so it gets coated with the sauce.
  • Sprinkle a little coriander leaves and serve.
