Kosha Mangsho

A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Do try it out and let me know how it turns out :) Ingredients  For Marination  1/2 kg Mutton  2 Tbsp Curd  1 Tsp Turmeric Powder 1-1/2 Tsp Chili Powder 1 Tbsp Ginger-garlic Paste  Salt to taste For the curry 2-3 Tbsp of Clarified butter/ Oil (You can use mustard oil if available) 2 Red Chilies  4-5 Peppercorns  4 Cloves  1 inch Cinnamon  2 Big Onions (sliced) 1/2 Tsp Sugar 1 Tsp Ginger-Garlic Paste  1 Potato (Cut into 4 big chunks) 1 Tsp of Red Chilli powder 1/2 Tsp Turmeric Powder Sal

Chicken Manchow Soup


Ingredients

  • 1 Capsicum finely chopped 
  • 1 Carrot finely chopped 
  • 200 gm chicken 
  • 2 Inch ginger thinly sliced 
  • 10 Garlic cloves finely chopped 
  • 1 Spring onion chopped(onion part)
  • 2 Tbsp Corn flour
  • 2 Tsp of coriander finely chopped
  • 1-1/2 Green chili finely chopped 
  • 2 Tsp soya sauce
  • 1/2 Maggie cube
  • 1 Egg
  • 1 Tsp of oil
  • Salt and pepper - to taste
  • 4 cups of water

Method

  • For the chicken stock- Take a pot, add water , add chicken , add salt and pepper and boil the chicken till it gets cooked. Filter the chicken stock. Remove the flesh from the chicken and keep it aside.
  • Heat oil in a deep pan or wok, add the spring onion, chopped capsicum and carrot. Stir for a minute and then add the chopped garlic ,ginger and green chili. Saute till you get a nice aroma of ginger and garlic.
  • Add in the chicken stock and some  water to adjust the quantity of the soup. Bring it to boil.
  • Add the chicken, soya sauce and the maggie cube and stir well.
  • Take a bowl beat egg and pour it into the soup.
  • Mix cornflour with some cold water and add it to the soup.
  • Add salt and pepper as per taste.
  • Now add the finely chopped coriander, this gives a very nice taste and aroma to the soup.
  • Serve it hot with some fried noodles.
