A very popular dish is Bengal which is full of flavors. I tried it for the first time when I visited a Bengali friends place and was totally in love with it. Its a spicy mutton curry traditionally made by slow cooking mutton in iron cast wok which gives it that amazing blackish- brown color. I did not have the iron cast wok so I did it in a normal wok and pressure cooked the mutton to save time. This is my version of the mutton curry. Palak Pulao / Spinach Rice


Palak rice, a very delicious, flavorful and a healthy rice dish that can be made quickly. Its a perfect lunch box for kids and adults. You can make palak/ spinach  rice by adding chopped spinach to the rice, the recipe that I will be sharing with you guys today or making a puree of spinach and then adding it to the rice and cooking it with other spices.
This is one of the best way to add some greens in your diet if you don"t like to consume palak in any other form

Ingredients 

  • 1 Cup Basmati Rice 
  • 1 Tbsp Ghee / Clarified butter
  • 2 Medium Sized Onions (Sliced)
  • 2 Cups Spinach (chopped)
  • 1 Tbsp Garlic (chopped)
  • 2 Green Chilies (chopped)
  • 2 Green Cardamom
  • 1 Inch Cinnamon
  • 7-8 Peppercorns
  • 3-4 Cloves 
  • 1-1/2 Cup Hot Water
  • 1-1/2 Tsp Coriander Powder

  • Handful of grated cheese (optional)
  • Salt to taste 
Method
  • Wash and soak rice for about 15 minutes 
  • Heat ghee/ clarified butter in a pan, add cardamom, cinnamon, cloves, peppercorns and roast it till you get a nice aroma of all the spices 



  • Now, add the sliced onion and saute till it turns slight brown in colour by adding a little salt and then add the chopped garlic and green chilies and saute for another 5 minutes on medium flame 
  • Add the chopped spinach and cook for another 2-3 minutes. The add the soaked rice, coriander powder, cheese, salt and mix well.(Be careful while adding salt as spinach and cheese have salt content )
  • Add hot water to the pan and let it simmer on high heat. Once the water starts to boil, put the flame on low and cover the pan and let it cook on low flame for about 10-12 minutes until the rice is done
 
  • Serve it hot
